Jitokko Dori is a Japanese indigenous chicken breed, which is mainly bred in Miyazaki and Kagoshima. It has a crunchy texture and a very juicy rich taste. It is said that after the chicken had been presented to the Jitos (medieval land stewards) of the Shimazu feudal clan, the chicken was called ‘jitokko’. It is very difficult to raise jitokko chickens; therefore, in the 18th year of the Showa Era (1943), the Education Ministry appointed the jitokko chicken as a natural heritage species. They are also called the chicken of legend. The secret to the taste are the thorough and ongoing efforts in quality control, such as raising them in a spacious environment, with only 1 or 2 chickens per square meter and no administering of antibiotics after the fourth week, etc.
